Stuffing ke liye:

Paneer - 200 grams (crumbled)

Pyaz (Onion) - 1 medium, finely chopped

Shimla Mirch (Capsicum) - 1/2 cup, finely chopped

Adrak (Ginger) - 1 teaspoon, grated

Lahsun (Garlic) - 2 cloves, minced

Tamatar (Tomato) - 1 medium, finely chopped

Zeera (Cumin seeds) - 1/2 teaspoon

Haldi (Turmeric powder) - 1/2 teaspoon

Garam Masala - 1/2 teaspoon

Namak (Salt) - to taste

Hara Dhania (Coriander leaves) - 2 tablespoons, finely chopped

Tel (Oil) - 2 tablespoons

Instructions (Nirdesh)

Pastry Dough Banana (Making the Pastry Dough)

Ek bade bowl mein maida aur namak ko mila lo.

Makkhan ke cubes daal kar ache se rub karo maida mein until it resembles coarse crumbs.

Thanda pani dheere dheere daal kar dough ko banalo. Dough should be firm but pliable.

Dough ko cling film se wrap karke fridge mein kam se kam 30 minutes ke liye rakh do.

Stuffing Banana (Making the Stuffing)

Ek kadhai mein tel garam karo aur zeera daalo.

Jab zeera crackle karne lage, tab pyaz, adrak aur lahsun daal kar fry karo until golden brown.

Ab tamatar aur shimla mirch daal kar cook karo until vegetables soften.

Haldi, lal mirch powder aur namak daal kar ache se mix karo.

Crumbled paneer daal kar fry karo until paneer lightly browned ho jaye.

Finally, garam masala aur hara dhania daal kar mix karo aur stuffing ko thanda hone ke liye rakh do.

Assembling the Puffs (Puffs ko Assemble karna)

Fridge se dough nikal kar lightly floured surface par roll karo. Approximately 1/4 inch thickness tak roll karo.

Rolled dough ko square ya rectangular pieces mein cut karo (approximately 4x4 inches).

Har piece ke center mein stuffing ka 1-2 tablespoons rakho.

Dough ke edges ko thoda paani laga kar fold karo aur press karke seal kar do.

Baking tray par butter paper spread karo aur us par puffs ko rakho.

Puffs ke upar halka sa milk brush karo taaki baking ke baad golden brown color aaye.

Baking (Bake karna)

Oven ko 200°C par preheat karo.

Preheated oven mein puffs ko 20-25 minutes ke liye bake karo until they are puffed up and golden brown.

Once done, oven se nikal kar thoda thanda hone do aur phir serve karo.

Tips (Kuch Tips)

Agar aap ready-made puff pastry sheets use kar rahe hain, to aapko dough banane ki zarurat nahi. Just follow the package instructions.

Stuffing mein aap apne taste ke according koi aur vegetables ya spices bhi add kar sakte hain.

Ensure stuffing thandi ho tab hi dough mein fill karo, warna dough soggy ho sakti hai.

Puffs ko air-tight container mein store karke 2-3 din tak fresh rakh sakte hain.
