Lauki Dal Recipe

Hello dosto! Aaj hum baat karenge ek healthy aur tasty dish ke baare mein – Lauki Dal. Yeh dish na sirf swaadisht hoti hai, balki bahut nutritious bhi hai. Toh chaliye, bina kisi deri ke shuru karte hain is lauki dal ki recipe.

Ingredients (Samagri):

Lauki (Bottle gourd) - 1 medium size (chopped)

Toor Dal (Arhar Dal) - 1 cup

Pyaaz (Onion) - 1 medium (finely chopped)

Tamatar (Tomato) - 1 medium (finely chopped)

Adrak (Ginger) - 1 inch piece (grated)

Lehsun (Garlic) - 4-5 cloves (finely chopped)

Hari Mirch (Green Chilies) - 2 (slit)

Haldi (Turmeric powder) - 1/2 tsp

Lal Mirch powder (Red Chili Powder) - 1 tsp

Dhaniya powder (Coriander Powder) - 1 tsp

Jeera (Cumin seeds) - 1 tsp

Hing (Asafoetida) - a pinch

Namak (Salt) - as per taste

Hara dhaniya (Coriander leaves) - for garnish

Ghee/ Tel (Clarified Butter/Oil) - 2 tbsp

Pani (Water) - as required

Method (Vidhi):

Step 1: Dal ko ubalna (Boiling the Dal)

Sabse pehle, toor dal ko ache se dho kar 20-30 minutes ke liye paani mein bhigo dein. Yeh step zaroori hai taaki dal jaldi se pak jaaye aur soft ho jaaye.

Ab ek pressure cooker lein aur usme bhigi hui toor dal, haldi aur namak daal kar 2-3 cups paani daal dein.

Cooker ka dhakkan band kar ke, 3-4 seeti aane tak dal ko pakayein. Jab tak dal pak rahi hai, tab tak hum lauki aur masala tayar kar lete hain.

Step 2: Lauki aur masala tayar karna (Preparing Lauki and Masala)

Lauki ko ache se peel kar lein aur chote cubes mein kaat lein. Dhyan rahein, lauki bilkul fresh aur tender honi chahiye.

Ek kadahi ya pan mein ghee ya tel daal kar garam karein. Ghee garam hote hi usme jeera aur hing daal dein. Jeera jab phutne lage, tab usme finely chopped pyaaz daal kar bhunein.

Pyaaz jab halka golden brown ho jaaye, tab usme grated adrak, chopped lehsun aur hari mirch daal kar achi tarah se bhunein.

Ab is mixture mein chopped tamatar daal kar 2-3 minutes tak pakayein, jab tak tamatar soft aur mushy na ho jaaye.

Is stage par, dhaniya powder aur lal mirch powder daal kar masala ko achi tarah se mix karein. Masala se tel alag hone lagega, tab samajh jaiye ki masala tayar ho gaya hai.

Step 3: Lauki ko pakana (Cooking the Lauki)

Ab tayar masala mein chopped lauki daal dein aur ache se mix karein, taaki lauki masala mein achi tarah se coat ho jaaye.

Lauki ko 5-7 minutes tak medium flame par pakaayein, taaki woh thodi soft ho jaaye.

Jab lauki thodi soft ho jaaye, tab usme 1 cup paani daal kar kadahi ko dhak kar 10 minutes tak pakaayein. Lauki ko time-to-time check karte rahein aur zarurat padne par paani add karte rahein.

Step 4: Lauki aur Dal ko milana (Combining Lauki and Dal)

Jab lauki aur dal dono acche se pak jaayein, tab cooker ka pressure nikaal kar, dal ko kadahi mein daal dein. Sab kuch ache se mix karein.

Is mixture ko 5-7 minutes tak low flame par pakaayein, taaki sab masale aur flavors acche se mix ho jaayein. Is stage par, consistency check karein aur zarurat padne par paani add karein. Lauki dal ko aap apne desired consistency ke hisaab se adjust kar sakte hain.

Step 5: Garnishing aur serve karna (Garnishing and Serving)

Lauki dal tayar ho chuki hai. Isse serve karne se pehle, upar se hara dhaniya daal kar garnish karein.

Lauki dal ko garma-garam chawal ya roti ke saath serve karein. Yeh dish bahut hi healthy aur tasty hoti hai, aur sabhi ko pasand aati hai.

Tips aur Tricks:

Lauki dal ko aap apne taste ke hisaab se adjust kar sakte hain. Agar aapko zyada spicy pasand hai, toh aap lal mirch powder ki quantity badha sakte hain.

Lauki dal mein aap thodi si tamarind paste ya amchur powder bhi add kar sakte hain, agar aapko thoda tangy taste pasand hai.

Agar aap ghee ki jagah olive oil ya sunflower oil use karna chahein, toh kar sakte hain. Lekin, ghee se ek rich flavor aata hai jo ki traditional taste deta hai.

Lauki ko chop karte waqt, seeds ko nikal dein agar woh hard ho. Tender seeds ko rehne dein, kyunki woh khane mein ache lagte hain.
