Ingredients (Samagri)

Lobhiya (Black-eyed Peas) – 1 cup

Pyaaz (Onion) – 1 medium-sized, finely chopped

Tamatar (Tomato) – 2 medium-sized, finely chopped

Adrak (Ginger) – 1-inch piece, grated

Lehsun (Garlic) – 4-5 cloves, minced

Hari mirch (Green Chili) – 2, slit

Haldi powder (Turmeric Powder) – 1/2 teaspoon

Dhaniya powder (Coriander Powder) – 1 teaspoon

Garam masala – 1/2 teaspoon

Jeera (Cumin Seeds) – 1 teaspoon

Hing (Asafoetida) – a pinch

Namak (Salt) – to taste

Tel (Oil) – 2 tablespoons

Hara dhaniya (Fresh Coriander) – for garnishing

Nimbu (Lemon) – 1, for serving

Preparation (Taiyari)

Lobhiya ko bhigo kar rakhein:

Sabse pehle, lobhiya ko ache se dho kar 4-5 ghante ke liye paani mein bhigo dein. Agar aap chahein toh raat bhar bhi bhigo sakte hain. Isse lobhiya soft ho jayegi aur jaldi pak jayegi.

Lobhiya ko ubalna:

Bhigi hui lobhiya ko pressure cooker mein daalein aur 2-3 cups paani, thoda namak, aur haldi powder mila kar 3-4 seeti lagne tak paka lein. Ubalne ke baad, pressure cooker ka pressure khud hi nikalne dein.

Cooking Process (Pakaane ka Process)

Tadka banana:

Ek kadhai ya pan mein tel garam karen. Jab tel garam ho jaye, toh usme jeera aur hing daalein. Jeera jab sizzle karne lage, tab usme pyaaz daalein aur golden brown hone tak bhun lein.

Masala banana:

Bhune pyaaz mein adrak, lehsun aur hari mirch daal kar kuch seconds tak bhun lein. Fir isme tamatar daal kar acche se mix karein. 

Tamatar soft hone aur tel chhodne tak isse bhun lein. Ab isme lal mirch powder, dhaniya powder aur thoda sa paani mila kar 2-3 minute tak pakayen.

Lobhiya aur masale ko milana:

Ab ubali hui lobhiya ko masale mein daal kar achhe se mix karein. Isme garam masala aur namak mila kar 5-7 minute tak slow flame par pakayen. Agar gravy zyada thick ho rahi ho toh thoda aur paani mila sakte hain.

Final touch:

Lobhiya dal ko hara dhaniya se garnish karen aur nimbu ke ras ke saath serve karen.
