Aaj hum banayenge ek traditional Gujarati dish – Gujarati Dal. Ye dish simple aur healthy hone ke saath-saath bahut hi delicious bhi hoti hai.
Gujarati cuisine apni unique taste aur simple ingredients ke liye famous hai, aur Gujarati Dal is no exception. To chaliye, bina kisi deri ke, shuru karte hain!

Ingredients:
1 cup tuvar dal (arhar dal)
2 tbsp peanuts (optional)
1 medium tomato, chopped
1 small green chili, slit
1 tbsp grated jaggery (gud)
1 tsp tamarind pulp (imli)
1/4 tsp turmeric powder (haldi)
1/4 tsp red chili powder (lal mirch powder)
Salt to taste
Water as required
For Tempering (Tadka):
2 tbsp ghee or oil
1/2 tsp mustard seeds (rai)
1/2 tsp cumin seeds (jeera)
2 cloves (lavang)
1 small piece of cinnamon (dalchini)
1 dry red chili
1/4 tsp asafoetida (hing)
8-10 curry leaves (kadi patta)
2 cloves garlic, finely chopped (optional)
1 inch ginger, grated
Garnish:
Fresh coriander leaves, chopped
Instructions:
Dal Preparation:
Wash aur Soak Karna: Tuvar dal ko ache se dho lo aur fir ise 30 minutes ke liye paani mein soak kar do. Soaking se dal jaldi aur evenly cook hoti hai.
Cook Karna: Soaked dal ko ek pressure cooker mein daalo. Saath hi, peanuts, chopped tomatoes, green chili, turmeric powder, aur thoda sa namak bhi daal do. Lagbhag 3 cups paani daal kar pressure cooker ka lid band kar do. 3-4 whistles tak cook karo, taki dal achi tarah se soft ho jaye.
Mash Karna: Jab pressure cooker ka pressure khatam ho jaye, dal ko mash kar lo. Yeh ensure karega ki dal smooth aur creamy bane.
Tadka Preparation:
Heat Oil/Ghee: Ek kadhai mein ghee ya oil garam karo. Gujarati dal mein ghee use karne se iska taste aur bhi enhance ho jata hai.
Add Spices: Jab ghee garam ho jaye, mustard seeds (rai) daalo aur jab yeh splutter ho jaye tab cumin seeds (jeera), cloves (lavang), aur cinnamon (dalchini) daalo.
Thoda sa saute karne ke baad, dry red chili aur hing add karo. Saath hi curry leaves (kadi patta), chopped garlic aur grated ginger bhi daal do. Inhe ache se fry karo jab tak garlic golden brown na ho jaye.
Mixing:
Combine Dal and Tadka: Ab mashed dal ko tadka mein daal do. Achhe se mix karo taki tadka ka flavor dal mein achi tarah se mix ho jaye.
Add Jaggery and Tamarind: Ab grated jaggery aur tamarind pulp daalo. Ye dono ingredients Gujarati dal ko ek unique sweet and sour taste dete hain. Saath hi red chili powder aur thoda aur namak bhi adjust kar lo.
Simmer: Dal ko low flame par 10-15 minutes tak simmer karo. Agar dal zyada thick lag rahi ho to thoda paani add kar sakte ho.
Garnishing and Serving:
Garnish: Dal ko serving bowl mein daalo aur freshly chopped coriander leaves se garnish karo.
Serve: Garma garam Gujarati dal ko steamed rice ya phulkas ke saath serve karo. Ye dal apne aap mein hi complete meal hoti hai, kyunki isme proteins, vitamins aur minerals sab kuch hota hai.
Tips:
Consistency: Gujarati dal ki consistency thodi thin hoti hai compared to other dals. So, ensure to add enough water while cooking.
Sweetness and Sourness: Jaggery aur tamarind ka balance achhe se maintain karo, taki dal ka taste perfect ho.
Soaking Peanuts: Agar peanuts use kar rahe ho to unhe bhi dal ke saath soak karlo taki wo bhi soft ho jayein.
Health Benefits:
Gujarati dal sirf taste mein hi nahi, balki health mein bhi bahut beneficial hoti hai. Ye high protein aur fiber content ki wajah se digestive system ko improve karti hai aur muscle building mein madad karti hai. Jaggery aur tamarind se antioxidants aur minerals bhi milte hain jo immunity boost karte hain.
