South Indian cuisine ki ek bohot hi popular dish hai Sambar Dal. Ye ek aisi dish hai jo har South Indian household mein regularly banti hai.

Ingredients (Samagri)
For the Sambar Dal:
1 cup tuvar dal (arhar dal)
1/2 tsp haldi powder (turmeric powder)
1 medium sized tamarind ball (imli ka gola), soaked in warm water
1 cup mixed vegetables (lauki, baingan, drumstick, gajar, tamatar, pyaz)
2 tbsp sambar powder
Salt as per taste
Water as needed
For the Tadka:
2 tbsp oil or ghee
1 tsp rai (mustard seeds)
1 tsp jeera (cumin seeds)
1/4 tsp hing (asafoetida)
2-3 dry red chilies
10-12 curry leaves
1 tsp urad dal
1 tsp chana dal
1 medium sized onion, finely chopped
1-2 green chilies, slit
1 medium sized tomato, finely chopped
Fresh coriander leaves for garnish
Method (Vidhi)
Step 1: Preparing the Dal
Dal ko dhona aur soak karna:
Pehle tuvar dal ko ache se dho kar, 30 minutes ke liye paani mein soak kar dein. Soak hone ke baad, isse pressure cooker mein dal dein.
Dal ko cook karna:
Dal mein 2 cups paani aur haldi powder daal kar, pressure cooker ko band kar dein. Medium flame par 4-5 whistles tak cook karein, jab tak dal achi tarah se gal na jaye.
Dal ko mash karna:
Jab pressure khatam ho jaye, cooker khol kar dal ko achi tarah se mash kar lein.
Step 2: Preparing the Tamarind Pulp
Tamarind pulp banana:
Soaked tamarind ko paani mein achi tarah se mash kar, pulp nikal lein. Pulp ko chhan kar ek side mein rakh dein.
Step 3: Cooking the Vegetables
Sabziyon ko cook karna:
Ek kadahi mein thoda paani daal kar mixed vegetables ko daal dein. Thoda salt daal kar vegetables ko 10-15 minutes tak cook karein, jab tak sabziyan soft na ho jayein.
Step 4: Making the Sambar
Dal aur sabziyon ko mix karna:
Cooked dal ko kadahi mein cooked vegetables ke sath mix kar dein. Is mixture mein tamarind pulp aur sambar powder daal kar achi tarah se mila lein.
Sambar ko boil karna:
Is mixture ko medium flame par 10-15 minutes tak boil karein. Salt ko check karein aur apne taste ke hisaab se adjust karein. Agar sambar zyada thick lag raha ho to thoda paani daal kar consistency adjust karein.
Step 5: Preparing the Tadka
Tadka banana:
Ek small pan mein oil ya ghee garam karein. Isme rai aur jeera daal kar crackle hone dein.
Hing aur lal mirch daalna:
Rai-jeera crackle hone ke baad, hing aur dry red chilies daal dein. Phir curry leaves, urad dal aur chana dal daal kar cook karein jab tak dal golden brown na ho jaye.
Pyaz aur tamatar add karna:
Ab finely chopped onion aur slit green chilies daal kar saute karein jab tak pyaz golden brown ho jaye. Iske baad chopped tomato daal kar cook karein jab tak tomato soft na ho jaye.
Step 6: Mixing Tadka with Sambar
Tadka ko sambar mein mix karna:
Prepared tadka ko sambar dal mein daal kar achi tarah se mila lein. Sambar ko 5-10 minutes aur boil karein taki tadka ka flavor sambar mein achi tarah se mix ho jaye.
Step 7: Garnishing
Sambar ko garnish karna:
Sambar ko serve karne se pehle fresh coriander leaves se garnish karein. Ye sambar dal ko ek fresh aur herby touch deta hai.
Serving Suggestion (Sevan Vidhi)
South Indian Sambar Dal ko traditionally hot steamed rice ke sath serve kiya jata hai. Aap isse idli, dosa, medu vada ya upma ke sath bhi enjoy kar sakte hain. Sambar dal ko thoda ghee daal kar serve karne se iska taste aur bhi enhance ho jata hai.
Tips (Tips)
Consistency check karein:
Sambar ki consistency na to bahut zyada thick honi chahiye aur na hi watery. Agar aapko lagta hai ki sambar bahut thick hai to thoda paani add kar sakte hain.
Sambar powder:
Aap market se ready-made sambar powder le sakte hain ya ghar par bhi bana sakte hain. Homemade sambar powder fresh aur flavorful hota hai.
Imli ka taste:
Imli ka pulp dalte waqt dhyaan dein ki taste perfect ho. Agar imli zyada ho to sambar bohot tangy ho jayega, aur agar kam ho to wo authentic taste nahi aayega.
Vegetables variation:
Aap apni pasand ki vegetables bhi add kar sakte hain. South Indian sambar mein traditionally drumsticks, pumpkin aur eggplant ka use hota hai.
