1 tsp red chilli powder
1 tsp jeera (cumin seeds)
1/2 tsp rai (mustard seeds)
1/4 tsp hing (asafoetida)
2 tbsp oil/ghee
Salt to taste
Fresh coriander leaves, chopped (garnishing ke liye)
Instructions (Vidhi):
Step 1: Dal ko pakana
Sabse pehle, Toor Dal ko acche se dho lein. Phir ise pressure cooker mein daalein aur 2 cups paani daal kar 3-4 seeti tak paka lein. Haldi powder aur thoda sa namak bhi daalein. Dal ko soft hone tak paka lein.
Jab tak dal pak rahi hai, aam ko peel kar ke cubes mein kaat lein.
Step 2: Aam ko pakana
Ek pan mein 1 tbsp oil/ghee garam karein. Isme jeera aur rai daalein. Jab ye crackle hone lagein, tab hing aur finely chopped pyaz daal kar bhun lein.
Pyaz jab golden brown ho jaye, tab isme chopped tomatoes aur green chillies daal kar 2-3 minutes tak saute karein.
Step 3: Dal aur Aam ko milana
Bhuni hui pyaz-tamatar mix mein ab cubed aam daal kar acche se mix karein.
2-3 minutes tak aam ko bhun lein taaki thoda soft ho jaye.
Ab pressure cooker mein se dal ko is mixture mein daal kar acche se mix karein.
Sabko acche se milane ke baad, isme red chilli powder aur namak daal kar ek achi consistency tak paka lein. Agar zarurat ho toh thoda aur paani daal sakte hain.
Step 4: Final Touch
Dal jab thoda thick ho jaye aur aam bhi properly cook ho jaye, tab gas band kar dein.
Dal ko ek serving bowl mein daalein aur fresh coriander leaves se garnish karein.
Serving Suggestions:
Aam Dal ko garma-garam chawal ke saath serve karein. Yeh khatti-meethi dal aur plain rice ka combination bohot hi zabardast lagta hai. Iske saath aap papad aur pickle bhi serve kar sakte hain.
Tips:
Aam ka selection bohot important hai. Hamesha kacche aam ka use karein taaki dal mein ek natural khatta-pan aaye.
Dal ko overcook mat karein, warna yeh mushy ho jayegi. Bas itna pakaayein ke dal soft ho jaye aur aam ka swaad usme properly blend ho jaye.
