2 tablespoons ghee or oil

Fresh coriander leaves (dhaniya) for garnish
Water as required

Step 1: Dal ko Pakayein
Sabse pehle, toor dal ko ache se dho kar 30 minutes ke liye paani mein bhigo dein. Yeh dal ko jaldi aur ache se pakne mein madad karega.
Ek pressure cooker mein bhigi hui dal daalein aur 2-3 cup paani add karein. Saath hi namak aur haldi daal dein. Cooker ka dhakkan bandh karke 3-4 seetiyan aane tak pakayein. Dal ko aise pakayein ki woh bilkul soft aur mushy ho jaye.
Jab tak pressure naturally release ho raha hai, hum apna tadka tayaar karenge.
Step 2: Tadka Tayaar Karein
Ek kadhai ya pan mein ghee ya tel garam karein. Ghee ka flavor aur aroma dal ko aur bhi mazedaar banata hai.
Garam ghee mein jeera aur rai daalein. Jab yeh phootne lagein, tab ismein finely chopped adrak aur hari mirch add karein. Adrak ko halki aanch par fry karein taaki uska raw flavor nikal jaye aur woh ek achhi khushboo dene lage.
Ab ismein finely chopped pyaaz daalein aur golden brown hone tak fry karein. Pyaaz achhe se fry ho jayein to usmein chopped tamatar add karein.
Tamatar ko soft aur mushy hone tak pakayein. Phir ismein lal mirch powder, garam masala aur thoda sa namak add karein. Masale ko achhe se mix karein aur oil alag hone tak cook karein.
Step 3: Dal aur Tadka ko Milayein
Jab dal cooker mein achhe se pak jaye, to usse achhe se mash karein taaki ek smooth consistency ban jaye.
Mashed dal ko tadka wali kadhai mein daalein aur achhe se mix karein. Zaroorat ke hisaab se paani add karein taaki dal ki consistency perfect ho.
Dal ko 5-10 minutes aur sim par pakayein taaki saari flavors achhe se mix ho jayein. Taste check karein aur namak adjust karein agar zarurat ho.
Garnishing aur Serving
Adraki Dal ko ek serving bowl mein nikaalein.
Upar se freshly chopped dhaniya se garnish karein.
Lemon wedges ke saath serve karein taaki log apni marzi se thoda tangy flavor add kar sakein.
