Hello dosto! Aaj hum baat karenge ek aise dal ke baare mein jo swadisht bhi hai aur sehatmand bhi – Dahiwali Dal. Yeh dal apko ek unique taste aur mazedar experience dega. To chaliye shuru karte hain is khatti-meethi dal ki recipe jo aapke khaane ka mazaa badha degi.
Ingredients:
1 cup arhar dal (tuvar dal)
1 cup dahi (curd)
2 tbsp ghee (clarified butter) ya tel (oil)
1 tsp jeera (cumin seeds)
1/2 tsp rai (mustard seeds)
1/2 tsp methi seeds (fenugreek seeds)
1-2 hari mirch (green chilies), finely chopped
1/2 tsp haldi (turmeric powder)
1 tsp lal mirch powder (red chili powder)
1 tsp dhaniya powder (coriander powder)
Namak swad anusaar (salt to taste)
2-3 laung (cloves)
1-2 tej patta (bay leaves)
1/2 tsp hing (asafoetida)
1 medium pyaz (onion), finely chopped
2 medium tamatar (tomatoes), finely chopped
1 tbsp adrak (ginger), finely chopped
1 tbsp lehsun (garlic), finely chopped
2-3 tbsp hara dhaniya (coriander leaves), finely chopped
Method:
Dal ko Pakana:
Sabse pehle, arhar dal ko acche se dho kar 20-30 minute ke liye paani mein bhigo dein.
Pressure cooker mein dal ko 3 cup paani ke saath, haldi aur namak mila kar 3-4 siti tak paka lein. Jab tak dal gal na jaye.
Dahi ki Taiyaari:
Dahi ko ek bartan mein dal kar acche se phent lein taaki usme koi guthli na rahe. Phenti hui dahi ko ek taraf rakh dein.
Tadka Lagana:
Ek kadahi mein ghee ya tel garam karein. Isme jeera, rai aur methi daal dein. Jab ye futne lagen to isme hing aur tej patta daal dein.
Phir hari mirch, laung, adrak aur lehsun daal kar bhun lein jab tak iska kachapan door na ho jaye.
Ab pyaz daal kar usse golden brown hone tak bhun lein.
Tamatar daal kar ise tab tak pakayein jab tak tamatar naram na ho jaye aur tel alag na ho jaye.
Masale Aur Dal ko Milana:
Bhuni hui pyaz-tamatar mein dhaniya powder aur lal mirch powder daal kar achhe se mila lein.
Isme ubli hui dal ko daal kar ache se mix karein.
Ab phenti hui dahi ko dal mein daal kar dhimi aanch par cook karein, lagataar hilate rahein taaki dahi phat na jaye. 10-15 minute tak ise dhimi aanch par pakaayein.
Finishing Touch:
Jab dal aur dahi acche se mil jaye aur dal gadhapan le le, tab gas band kar dein.
Isse ek serving bowl mein nikaal kar hara dhaniya se garnish karein.
Serving Suggestions:
Dahiwali Dal ko garam garam chawal ya phir tandoori roti ke saath serve karein. Yeh dal apke daily khaane mein ek naya twist laa sakta hai.
