Ingredients (Samagri)
1 cup kaali masoor dal (black lentils)
1 medium size pyaz (onion), finely chopped
2 tamatar (tomatoes), finely chopped
1 tablespoon adrak-lehsun ka paste (ginger-garlic paste)
2-3 hari mirch (green chillies), slit
1 teaspoon haldi powder (turmeric powder)
1 teaspoon dhaniya powder (coriander powder)
1 teaspoon jeera (cumin seeds)
1 teaspoon garam masala
1 teaspoon lal mirch powder (red chilli powder)
2 tablespoon tel (oil) ya ghee (clarified butter)
Namak swad anusar (salt to taste)
Hara dhaniya (fresh coriander), garnish ke liye
Method (Vidhi)
Step 1: Dal Ko Bhigo Kar Rakhna
Sabse pehle, 1 cup kaali masoor dal ko ache se dhoke 4-5 ghante ya raat bhar ke liye paani mein bhigo kar rakh dein. Isse dal jaldi pakti hai aur soft ho jati hai.
Step 2: Dal Ko Ubalna
Ek pressure cooker lein aur isme bheegi hui dal ko dal dein. Isme 3-4 cup paani daal kar namak aur haldi powder mila dein. Ab pressure cooker ko band karke 3-4 seeti tak paka lein. Seeti nikalne ke baad, gas band kar dein aur pressure ko apne aap nikalne dein.
Step 3: Tadka Tayaar Karna
Ek kadai mein tel ya ghee garam karein. Jab tel garam ho jaye, isme jeera daal dein. Jab jeera sizzle hone lage, to isme finely chopped pyaz daal kar bhunein. Pyaz ko halka golden brown hone tak bhunein.
Step 4: Adrak-Lehsun Aur Hari Mirch
Jab pyaz bhun jaye, to isme adrak-lehsun ka paste aur hari mirch daal kar 2-3 minute tak bhunein. Isse dal ka swad aur badh jaayega.
Step 5: Tamatar Aur Masale
Ab finely chopped tamatar daal kar ache se mix karein. Tamatar ko tab tak bhunein jab tak wo soft na ho jaye aur oil alag na hone lage. Iske baad, isme dhaniya powder, lal mirch powder aur garam masala mila dein. Masale ko ache se mix karke 2-3 minute tak bhunein.
Step 6: Dal Aur Tadka Ko Milana
Jab tamatar aur masale ache se bhun jayein, to is tadke ko cooker mein paki hui dal mein daal dein. Isse ache se mix karein aur thoda paani mila kar 5-7 minute tak sim gas pe pakaein. Isse dal ka swad aur accha ho jata hai.
Step 7: Garnish Aur Serve
Dal ko ek serving bowl mein nikal kar upar se hara dhaniya se garnish karein. Aapki delicious kaali masoor dal tayaar hai. Isse garma-garam chawal, roti ya paratha ke sath serve karein.
Tips (Kuch Zaroori Tips)
Dal Ko Bhigo Kar Rakhna: Dal ko pehle se bhigo kar rakhna zaroori hai taaki wo jaldi paksake aur soft ho jaye.
Pressure Cooker: Pressure cooker mein dal jaldi pakti hai, lekin aap chahein to open pot mein bhi paka sakte hain, lekin time thoda zyada lagega.
Tadka Ka Flavour: Tadka mein dal ka asli swad hota hai. Isliye pyaz, adrak-lehsun aur tamatar ko ache se bhunein.
Masale: Masale swad anusar adjust kar sakte hain. Agar aapko spicy pasand hai to thoda aur lal mirch powder mila sakte hain.
Garnish: Hara dhaniya dal ke upar garnish karna na bhulein. Isse dal ka taste aur bhi enhance hota hai.
