Preparation:
Kala Chana Bhigona aur Ubalna:
Sabse pehle, 1 cup kala chana ko raat bhar paani mein bhiga dein. Agar aapke paas time kam hai, toh aap ise garam paani mein 4-5 ghante ke liye bhiga sakte hain.
Agle din, bhige hue kala chana ko ache se dhokar ek pressure cooker mein daalein. 3-4 cup paani aur thoda sa namak daalkar ise 6-7 seeti tak ubal lein. Iske baad gas bandh karke pressure ko khud se nikalne dein.
Masala Tayaar Karna:
Ek kadahi ya kadhai mein tel garam karein. Jab tel garam ho jaye, tab isme jeera aur tej patta daalein. Jab jeera chidakne lage, tab isme adrak aur lehsun ka paste daalein. Ise halka bhun lein.
Ab isme kata hua pyaz daalkar golden brown hone tak bhunein. Phir isme hari mirch daalein.
Jab pyaz ache se bhun jaye, tab isme kate hue tamatar daalein aur tamatar ko soft hone tak pakayein. Tamatar pakne par, haldi, dhania powder, aur lal mirch powder daalkar ache se milayein. Masala ko tab tak bhunein jab tak tel alag na hone lage.
