Dal Palak

Dal Palak, ek aisi dish hai jo taste aur health dono mein best hai. Yeh recipe protein-rich dal aur iron-rich palak ko combine karke banti hai, jo isse ek perfect meal banata hai.

Ingredients (Samagri)

1 cup tuar dal (arhar dal)

2 cup fresh palak (spinach), finely chopped

1 medium pyaz (onion), finely chopped

2 tamatar (tomatoes), finely chopped

1 inch adrak (ginger), grated

4-5 lehsun (garlic) cloves, finely chopped

2-3 hari mirch (green chilies), slit

1 tsp jeera (cumin seeds)

1/2 tsp haldi (turmeric powder)

1 tsp lal mirch powder (red chili powder)

1 tsp dhania powder (coriander powder)

1/2 tsp garam masala powder

2 tbsp ghee ya tel (oil)

Namak swad anusar (salt to taste)

Fresh dhania patta (coriander leaves) for garnish

Preparation (Taiyari)

Dal ko dhona aur soak karna:

Pehle tuar dal ko achhe se dhoke, use 15-20 minutes ke liye paani mein bhigo dein. Yeh step zaroori hai taaki dal jaldi aur evenly pak sake.

Palak ko taiyar karna:

Palak ko dhoke, finely chop kar lein. Dhyan rahein, palak mein mitti na rahe, isliye ise ache se dhona zaroori hai.

Cooking (Pakane ka tarika)

Dal ko pressure cook karna:

Dal ko pressure cooker mein dal kar usme 2 cup paani, haldi powder aur thoda namak daal dein. Isse 3-4 seeti aane tak pressure cook karein. Seeti aane ke baad, gas bandh kar dein aur pressure khatam hone dein.

Tadka banana:

Ek kadhai mein ghee ya tel garam karein. Isme jeera daal kar tadka lagayein. Jab jeera brown hone lage, tab usme adrak aur lehsun daalein. Ise halki aanch par 1-2 minute tak bhunein jab tak lehsun golden brown na ho jaye.

Pyaz aur hari mirch daalna:

Ab isme finely chopped pyaz aur hari mirch daal dein. Pyaz ko translucent hone tak bhunein.

Tamatar aur masale:

Ab isme chopped tamatar daal kar bhunein jab tak tamatar soft aur mushy na ho jaye. Isme lal mirch powder, dhania powder aur garam masala powder daal kar ache se mix karein.

Palak daalna:

Jab tamatar aur masale ache se mix ho jayein, tab isme finely chopped palak daal dein. Palak ko 2-3 minute tak pakayein jab tak wo shrink ho jaye aur apna paani chod de.

Cooked dal ko add karna:

Ab is tadka aur palak mixture mein cooked dal daal dein. Sabko ache se mix karein aur thoda paani add karein agar dal zyada thick ho. 

Dal ko 5-10 minute tak medium flame par simmer hone dein taaki saare flavors ache se mix ho jayein.

Final touch:

Dal Palak tayar ho gaya hai. Isse garam-garam serve karein, fresh dhania patte se garnish karke.
