Pyaaz – 1 medium size, barik kati hui
Lehsun – 4-5 kaliyan, barik kati hui
Adrak – 1 inch ka tukda, kadukash kiya hua
Hari mirch – 2, barik kati hui
Tamatar – 1 large, barik kata hua
Lal mirch powder – 1/2 teaspoon
Dhania powder – 1 teaspoon
Garam masala – 1/2 teaspoon
Hari dhania patta – garnish ke liye
Preparation (Taiyaari)
Step 1: Dal ko ubalna
Sabse pehle, Arhar Dal ko achhe se dho lein. Isse kam se kam 30 minutes ke liye paani mein bhigo dein.
Cooker mein bhigi hui dal, 3 cup paani, haldi powder, aur namak daal kar 3-4 siti lagne tak paka lein. Cooker ka pressure khatam hone par dal ko achhe se mash kar lein. Agar zaroorat ho to thoda paani aur mila sakte hain.
Step 2: Tadka taiyaar karna
Ek kadhai ya pan mein ghee ya tel garam karen. Jeera aur rai daal kar chittarane dein.
Phir hing daal kar thodi der bhunein.
Ab isme barik kati hui pyaaz daal kar golden brown hone tak bhunein.
Lehsun aur adrak mila kar 1-2 minute ke liye bhunein, jab tak iska kachcha pan chala na jaye.
Hari mirch aur tamatar mila kar tamatar soft hone tak pakayein.
Step 3: Masale daalna
Lal mirch powder, dhania powder, aur garam masala mila kar achhe se mix kar lein.
Paki hui dal ko is tadke mein daal kar achhe se milayein. Zarurat ke anusar paani mila sakte hain.
Dal ko 5-10 minute ke liye halki aanch par sim karne dein, taaki masale dal mein achhe se ghul mil jayein.
Step 4: Garnish aur serve
Dal ko serving bowl mein nikaalein aur upar se hari dhania se garnish karein.
Garma-garam Arhar Tadka Dal ko chawal ya roti ke sath serve karein.
