Chana chola dal

Ingredients (Samagri):

Kabuli Chana (Chickpeas) – 1 cup

Chana Dal – 1/2 cup

Pyaz (Onion) – 2 medium, finely chopped

Tamatar (Tomatoes) – 3 medium, finely chopped

Hari Mirch (Green Chillies) – 2, finely chopped

Adrak (Ginger) – 1-inch piece, grated

Lehsun (Garlic) – 4-5 cloves, minced

Jeera (Cumin Seeds) – 1 tsp

Haldi Powder (Turmeric Powder) – 1/2 tsp

Dhaniya Powder (Coriander Powder) – 1 tbsp

Garam Masala – 1 tsp

Namak (Salt) – as per taste

Tel (Oil) – 2 tbsp

Hara Dhaniya (Coriander Leaves) – for garnishing

Preparation (Taiyari):

Soaking Chana and Chana Dal:

Raat bhar ke liye kabuli chana ko pani mein bhigo dein. Agar jaldi ho toh garam pani mein 4-5 ghante bhi bhigoya ja sakta hai.

Chana dal ko bhi kam se kam 1 ghanta pani mein bhigo kar rakh dein.

Cooking Chana:

Ek pressure cooker mein bhigoya hua kabuli chana daal kar, 3-4 cups pani daalein aur 1/2 tsp namak. 5-6 seeti tak pakayein ya tab tak, jab tak chana soft na ho jaye.

Cooking Chana Dal:

Ek aur pressure cooker mein bhigoya hua chana dal daal kar, 2 cups pani aur 1/2 tsp haldi daal dein. 2-3 seeti tak pakayein.

Method (Vidhi):

Tadka Tayyar Karna:

Ek kadhai mein tel garam karein. Usmein jeera daalein aur tadka lagayein jab tak wo brown na ho jaye.

Ab ismein adrak aur lehsun daalein, aur thoda bhun lein.

Onion Aur Tomato Ka Masala:

Ab ismein finely chopped pyaz daalein aur golden brown hone tak bhun lein.

Phir ismein hari mirch aur tamatar daalein aur tamatar soft hone tak cook karein.

Masale Add Karna:

Haldi, lal mirch powder, dhaniya powder daal kar achhe se mix karein aur masala ko tel chhodne tak bhun lein.

Chana Aur Dal Ko Mix Karna:

Jab masala achhe se bhun jaye, ismein cooked chana aur chana dal daalein. Achhe se mix karein taaki sab masale chana aur dal mein achhe se ghul jayein.

Gravy Ko Adjust Karna:

Ab gravy ko adjust karne ke liye thoda pani daalein. Agar gravy patli chahiye toh zyada pani daalein, aur agar ghadhi chahiye toh kam pani daalein. Salt adjust karein aur 10-15 minutes tak medium flame par cook hone dein.

Final Touch:

Aakhir mein garam masala aur amchur powder daalein. Thoda aur cook karein taaki saari flavors achhe se blend ho jayein.

Garnishing Aur Serving:

Chana Chole Dal ko ek serving bowl mein nikaalein.

Upar se freshly chopped hara dhaniya se garnish karein.

Isse garma-garam rice ya phir chapati ke saath serve karein.

Tips (Tips):

Pre-soaking:

Chana ko ache se bhigoye bina cook na karein. Yeh ensure karta hai ki chana evenly aur soft cooked ho.

Spices Adjust:

Apne taste ke hisaab se masale adjust karein. Agar spicy pasand hai toh zyada hari mirch ya lal mirch powder daalein.

Consistency:

Chana Chole Dal ki consistency apne preference ke hisaab se adjust karein. Agar patla pasand hai toh zyada pani add karein, aur agar thick pasand hai toh kam pani mein cook karein.
