Ingredients ki Zaroorat
Isse banane ke liye aapko kuch basic ingredients ki zaroorat padegi. Toh chaliye pehle ingredients ki list dekh lete hain:
1 cup kali dal (urad dal)
1/2 cup rajma
1/4 cup chana dal
2 tbsp desi ghee
1 tsp jeera
1 tsp hing (asafoetida)
2-3 laung (cloves)
1 inch dalchini (cinnamon stick)
2 badi elaichi (black cardamom)
1 medium pyaz, finely chopped
2-3 green mirch, slit
1 tbsp adrak-lahsun paste (ginger-garlic paste)
2 medium tamatar, finely chopped
1 tsp haldi powder (turmeric powder)
1 tbsp dhaniya powder (coriander powder)
1 tsp lal mirch powder (red chili powder)
Namak swad anusaar
Fresh dhaniya patta (coriander leaves) for garnish
Preparation ka Process
Dal ko Bhigo:
Sabse pehle, kali dal, rajma aur chana dal ko acche se dho lein. Fir inhe ek badi bowl mein daal kar paani mein raat bhar ya kam se kam 8 ghante ke liye bhigo dein. Yeh step zaroori hai taki dal aur rajma acche se phool jaaye aur jaldi pak jaaye.
Dal ko Pressure Cook Karein:
Ab ek pressure cooker lein aur isme bhigi hui dal aur rajma daal dein. Isme 4-5 cup paani aur thoda namak daal kar 4-5 seeti lagayein ya jab tak dal soft na ho jaaye tab tak pakaayein. Cooker ko side mein rakh dein aur pressure release hone dein.
Tadka Tayaar Karein:
Ab ek kadahi mein desi ghee garam karein. Jab ghee garam ho jaaye, tab isme jeera daal dein. Jab jeera sizzle karne lage, tab isme hing, laung, dalchini aur badi elaichi daal kar thodi der tak bhunein.
Masala Banayein:
Ab isme finely chopped pyaz daal kar golden brown hone tak bhunein. Fir isme slit green mirch aur adrak-lahsun paste daal kar ache se mix karein. Jab adrak-lahsun paste ka raw smell chala jaaye, tab isme finely chopped tamatar daal dein. Tamatar ko mushy hone tak pakaayein.
Spices Add Karein:
Tamatar soft hone ke baad isme haldi powder, dhaniya powder, aur lal mirch powder daal kar ache se mix karein. Masale ko tab tak bhunein jab tak ghee alag na ho jaaye.
Dal Aur Masala Mix Karein:
Ab pressure cooker mein se cooked dal aur rajma ko kadahi mein daal dein. Ache se mix karein taki masala aur dal acche se mil jaaye. Agar dal zyada thick lag rahi ho, to thoda paani add karein aur desired consistency tak pakaayein.
Simmer Karein:
Dal ko low flame par 15-20 minute tak simmer karein taki sab flavors acche se blend ho jaayein. Thoda namak taste karke adjust karein.
Garnish Karein:
Himachali Dal ko fresh dhaniya patta se garnish karein. Ab aapki swadisht Himachali Dal tayaar hai.
