Ingredients:
1 cup moong dal
2 tbsp mustard oil
1 bay leaf (tej patta)
2 dry red chilies
1 tsp cumin seeds (jeera)
1 tomato, chopped
1 tsp ginger paste (adrak ka paste)
1 tsp turmeric powder (haldi)
1 tsp red chili powder (lal mirch)
Salt to taste
2-3 cups water
Fresh coriander leaves (dhaniya patta) for garnishing
Preparation:
Dal Bhunana: Sabse pehle, moong dal ko ek tawa par dry roast karen. Jab dal ka rang halka golden ho jaye aur ek achi khushboo aaye, tab samajh jaiye ki dal bhun chuki hai. Isse ek side mein rakh dein aur thoda cool hone dein.
Dal Dhona: Bhuni hui dal ko ache se dho kar pani mein 15-20 minute ke liye bhigo dein. Yeh process dal ko soft banane mein madad karta hai.
Tel Garam Karna: Ek kadahi mein mustard oil garam karen. Jab tel se dhuaan nikalne lage, tab samajh jaiye ki tel tayaar hai.
Tadka Lagana: Garam tel mein bay leaf aur dry red chilies daal kar thoda sa bhunlein. Phir cumin seeds daalein aur jab yeh crackle karne lagein, toh isme ginger paste daalein aur ek minute ke liye bhunlein.
Tomato Aur Masalein: Ab isme chopped tomato, turmeric powder, aur red chili powder daalein. Tomatoes ko achi tarah se bhunlein jab tak woh soft aur mushy na ho jayein.
Dal Pakana: Is tadka mixture mein ab soaked moong dal daalein aur acche se mix karein. Salt daal kar is mixture ko thoda bhunlein.
Ab isme 2-3 cups pani daalein aur ache se mix karein. Kadahi ko dhak kar dal ko medium flame par 15-20 minute tak pakne dein, jab tak dal puri tarah se gal na jaye.
Finishing Touch: Jab dal acche se gal jaye, to gas band kar dein aur isme fresh coriander leaves daal kar garnish karein.
Serving Suggestions:
Bengali Dal ko garma garam chawal ke saath serve kiya jata hai. Iska simple swad aapke taste buds ko ek naya anubhav dega. Aap isse roti ke saath bhi enjoy kar sakte hain. Kuch log is dal ko baingan bhaja (fried eggplant) aur aloo posto (potato with poppy seeds) ke saath bhi khana pasand karte hain.
Tips for Perfect Bengali Dal:
Mustard Oil: Is dish ka asli swad mustard oil se aata hai. Agar aapko iska taste strong lage, to aap half mustard oil aur half vegetable oil ka mixture use kar sakte hain.
Consistency: Bengali Dal ko thoda thick banaya jata hai. Agar aapko thin consistency pasand hai, to aap pani ka amount badha sakte hain.
Aromatics: Bay leaf aur dry red chilies ka use is dish mein ek earthy flavor laata hai. Aap isme curry leaves ya phir green chilies bhi add kar sakte hain apne taste ke hisaab se.
Roasting Dal: Dal ko dry roast karna bahut zaroori hai, kyunki isse dal ka texture aur flavor dono enhance hote hain. Is step ko skip na karein.
