Kathiyawadi Dal Recipe

Ingredients (Samagri)

Toor Dal (Arhar Dal) - 1 cup

Pani - 3 cups

Tamatar - 2, finely chopped

Adrak (Ginger) - 1 inch piece, grated

Lehsun (Garlic) - 4-5 cloves, finely chopped

Hari Mirch (Green Chillies) - 2, finely chopped

Hing (Asafoetida) - 1/4 tsp

Haldi (Turmeric Powder) - 1/2 tsp

Lal Mirch Powder (Red Chilli Powder) - 1 tsp

Dhaniya Powder (Coriander Powder) - 1 tsp

Jeera (Cumin Seeds) - 1 tsp

Sarson (Mustard Seeds) - 1 tsp

Kari Patta (Curry Leaves) - 10-12 leaves

Imli Pulp (Tamarind Pulp) - 2 tbsp

Gud (Jaggery) - 1 tbsp

Namak (Salt) - to taste

Ghee (Clarified Butter) - 2 tbsp

Hara Dhaniya (Coriander Leaves) - for garnishing

Instructions (Vidhi)

Step 1: Dal ko Pressure Cook Karein

Pehle toor dal ko acche se dho kar 30 minutes ke liye paani mein bhigo dein. Phir dal ko pressure cooker mein 3 cups paani ke sath daal kar 3-4 seeti lagne tak paka lein. Jab tak dal pak rahi hai, hum tadka tayar kar lete hain.

Step 2: Tadka Tayari

Ek kadhai mein ghee garam karein. Jab ghee garam ho jaye, usme sarson aur jeera daal dein. Jab jeera sputter hone lage, tab hing aur kari patta daal dein. Fir grated adrak, lehsun aur hari mirch daal kar 1-2 minute tak bhun lein.

Step 3: Masale aur Tamatar Add Karein

Ab is tadke mein finely chopped tamatar daal kar acche se mix karein. Tamatar ko tab tak bhunein jab tak wo soft na ho jaye aur oil alag na hone lage. Iske baad haldi, lal mirch powder aur dhaniya powder daal kar acche se bhun lein.

Step 4: Dal ko Tadka Mein Mix Karein

Pressure cooker ki dal ko khol kar acche se mash kar lein aur phir is mashed dal ko tadke mein daal dein. Is mixture ko achhe se mix karein aur thoda paani add karein agar zarurat ho.

Step 5: Imli aur Gud Add Karein

Ab is dal mein imli ka pulp aur gud daal kar acche se mix karein. Namak swad anusaar daalein. Dal ko ache se ubalne dein taki saari cheezein mix ho jayein aur swad bharpoor ho jaye.

Step 6: Garnishing aur Serve Karein

Jab dal achhe se cook ho jaye, usme hara dhaniya daal kar garnish karein. Kathiyawadi dal tayar hai serve karne ke liye.

Smokey Flavor: Agar aapko dal mein thoda smokey flavor chahiye to tadka karne ke baad ek chhoti katori mein garam coal rakhein, uspe thoda ghee daal kar dal ke kadhai mein rakhein aur cover kar dein. Isse dal mein ek unique smokey flavor aa jayega.

Less Spicy Version: Agar aapko teekha kam pasand hai to hari mirch aur lal mirch powder ka quantity kam kar dein.
