Ingredients
Sabse pehle hum apne Maharashtrian Dal ke ingredients dekhte hain:
1 cup toor dal (arhar dal)
2 cups paani
1 medium sized pyaz, finely chopped
2 tomatoes, finely chopped
2-3 hari mirch, slit
1 tsp ginger-garlic paste
1 tsp haldi powder (turmeric powder)
1 tsp lal mirch powder (red chili powder)
1 tsp jeera (cumin seeds)
1 tsp rai (mustard seeds)
1/2 tsp hing (asafoetida)
10-12 curry patta (curry leaves)
2 tbsp tamarind pulp
2 tbsp ghee ya tel (ghee or oil)
Namak swad anusar (salt to taste)
Hara dhaniya (coriander leaves) for garnishing
Method
Step 1: Dal ko Cook Karna
Sabse pehle, toor dal ko ache se dho kar 30 minutes ke liye paani mein bhigo dein. Phir pressure cooker mein bhigi hui dal, 2 cups paani, aur thoda sa haldi daal kar 3-4 whistles tak paka lein.
Jab tak dal pressure cooker mein pak rahi hai, tab tak hum apni tadka ki taiyari karte hain.
Step 2: Tadka Taiyar Karna
Ek kadhai mein ghee ya tel garam karein. Jab ghee garam ho jaye, tab usmein rai daal kar phutne dein. Phir jeera aur hing daal kar thoda sa bhun lein. Iske baad curry patta aur hari mirch daal kar 1-2 minute tak bhunein.
Step 3: Masala Tayyar Karna
Ab kadhai mein finely chopped pyaz daal kar golden brown hone tak bhunein. Jab pyaz bhun jaye, tab usmein ginger-garlic paste daal kar 1-2 minute tak bhunein.
Phir chopped tomatoes daal kar ache se mix karein aur tomatoes ko soft hone tak paka lein.
Step 4: Dal aur Masala ko Mix Karna
Jab tomatoes ache se pak jaye aur oil chhodne lage, tab usmein haldi powder, lal mirch powder aur namak daal kar 1-2 minute tak bhunein.
Phir is masale mein cooked dal aur tamarind pulp daal kar ache se mix karein. Agar dal thodi thick lag rahi ho to thoda paani aur daal sakte hain.
Dal ko 5-7 minutes tak simmer hone dein taaki saari flavors ache se blend ho jayein.
Step 5: Garnish Karna
Jab dal ache se cook ho jaye, to gas band kar dein aur dal ko ek serving bowl mein nikaal lein. hara dhaniya daal kar garnish karein. Garam-garam Maharashtrian Dal ko chawal ya roti ke saath serve karein.

Agar aapko dal thodi tangy pasand hai, to tamarind pulp ki quantity bada sakte hain.
