1 cup tuar dal (arhar dal)
1/2 cup chana dal
1/4 cup moong dal
1/4 cup masoor dal
1 badi pyaaz (finely chopped)
2 tamatar (finely chopped)
2-3 hari mirch (slit)
1 tablespoon adrak-lehsun ka paste
1 teaspoon jeera
1 teaspoon haldi powder
1 teaspoon lal mirch powder
1 teaspoon dhaniya powder
1 teaspoon garam masala
1 tablespoon ghee (desi ghee)
Namak swaad anusaar
Pani zarurat anusaar
Hara dhaniya (for garnishing)
Method (Vidhi)
1. Dal ko bhigo kar ubalna
Pehle, saari dalan nu ache tarike nal dho lao te 30-45 minute layi paani vich bhigo ke rakh deo. Isse nal dalan changi tarah se gal jandi hai te time vi cut lagda hai dalan nu ubal ke pakande vich.
2. Dal ko pressure cooker mein pakana
Pressure cooker vich 4-5 cup paani pao te is vich bhigi hui dalan pa deo. Is vich haldi, thoda namak pa deo te 3-4 seeti lagwa deo taki dal changi tarike nal pak jaye. Jado cooker de seeti nikal jaaye, taan dalan nu ghuma deo taki ikdam creamy texture aa jaye.
3. Tadka tiyaar karna
Ek kadahi vich ghee garam karo. Jado ghee achi tarike nal garam ho jaaye, taan is vich jeera pa deo. Jado jeera changa tarah se bhun jaye te usda rang badal jaaye, taan is vich pyaaz pa deo te golden brown hon tak bhun lao.
4. Adrak-lehsun te masale vich pao
Pyaaz bhun jan de baad, is vich adrak-lehsun ka paste pa deo te changa tarike nal bhun lao taki usda kachapan door ho jaye. Fir is vich hari mirch, tamatar, lal mirch powder, dhaniya powder pa deo te tamatar nu soft hon tak bhun lao.
5. Dal te tadka milana
Jado tamatar soft ho jaye te masale changi tarike nal mix ho jaye, taan is vich ubli hui dalan pa deo. Changgi tarike nal mix karo taki saare masale dal vich mil jaye. Zarurat anusaar paani vi pa deo taki dal di consistency vadhiya ho jaye. Dal nu halki aanch te 10-15 minute layi pakao taki saare swaad ekathe ho jaye.
6. Final touch
Akhir vich garam masala pa deo te dal nu ache tarike nal mix karo. Hara dhaniya nal garnish kar deo.
