For Tadka:

2 tablespoons makhan (butter)

2 tablespoons ghee (clarified butter)

1 large pyaz (onion), finely chopped

2 tablespoons ginger-garlic paste

2-3 hari mirch (green chilies), slit

3-4 tomatoes, pureed

1 teaspoon jeera (cumin seeds)

1 teaspoon dhania powder (coriander powder)

1 teaspoon red chili powder

1/2 teaspoon garam masala

1/2 cup fresh cream

1 tablespoon kasuri methi (dried fenugreek leaves)

Fresh coriander leaves, chopped (garnish ke liye)

Instructions:

Step 1: Dal Preparation

Sabut urad dal aur rajma ko ache se dho kar raat bhar (ya kam se kam 8 ghante) ke liye pani mein bhigo dein.

Agle din, soaked dal aur rajma ko pressure cooker mein daal kar 4 cups pani, chopped ginger, haldi powder aur salt add karein.

Cooker ko band karein aur 7-8 whistles tak pressure cook karein jab tak dal aur rajma soft aur mushy ho jaayein.

Cooker ka pressure naturally release hone dein aur phir dal ko ache se mash karein taaki creamy consistency mile.

Step 2: Tadka Preparation

Ek heavy bottomed pan ya kadai mein makhan aur ghee ko garam karein.

Isme jeera add karein aur jab ye crackle hone lage to finely chopped pyaz ko daal kar golden brown hone tak sauté karein.

Ab ginger-garlic paste aur slit hari mirch daal kar achi tarah se bhunein jab tak raw smell chali jaaye.

Tomato puree add karein aur medium flame par cook karein jab tak oil sides se separate hone lage.

Dhania powder, red chili powder aur garam masala daal kar mix karein aur masale ko 2-3 minutes tak bhunein.

Step 3: Combining Dal and Tadka

Pressure cooked dal ko tadka mein daal kar achi tarah se mix karein.

Low flame par dal ko ache se slow cook hone dein. Yeh process thoda time-consuming hai lekin yahin se dal makhani ka real flavor aata hai. Aapko dal ko kam se kam 30-40 minutes tak slow cook karna hai, bich bich mein stir karte rahein taaki dal bottom mein stick na ho.

Cook karte waqt agar dal zyada thick lag rahi ho to thoda pani add kar sakte hain.

Step 4: Final Touch

Jab dal desired consistency par aa jaaye, to isme fresh cream aur crushed kasuri methi add karein. Ache se mix karein aur aur 5-7 minutes tak cook karein.

Taste check karein aur zarurat ho to salt adjust karein.

Garnish ke liye fresh coriander leaves sprinkle karein.
