1 tsp mustard seeds (rai)
1/4 tsp turmeric powder (haldi)
1/2 tsp red chili powder (lal mirch powder)
1/2 tsp coriander powder (dhania powder)
Salt to taste (namak swad anusar)
2 tbsp oil or ghee
Fresh coriander leaves for garnishing (hara dhania)
Instructions (Vidhis):
Step 1: Mung Dal ko Prepare Karna
Sabse pehle, mung dal ko achi tarah se dho lo. Dho kar 15-20 minutes ke liye paani mein bhigo do. Yeh step zaroori hai taaki dal jaldi pak jaaye aur soft ho jaaye.
Step 2: Dal ko Cook Karna
Ek pressure cooker mein, mung dal aur 3 cups paani daalo. Isme thoda namak bhi daal do.
Cooker ka lid band karke 2-3 seetiyan lagne tak pakao. Dal ko soft hone tak pakao, agar zarurat lage toh thoda aur paani daal sakte hain.
Pressure cooker ka pressure khatam hone do, phir lid kholo aur dal ko ek baar achi tarah se mash kar lo. Yeh dal ko creamy texture dega.
Step 3: Tadka Prepare Karna
Ek pan mein oil ya ghee garam karo. Jab oil garam ho jaaye, toh isme cumin seeds (jeera) aur mustard seeds (rai) daal do. Inhe crackle hone do.
Ab isme finely chopped pyaz daal do aur golden brown hone tak bhuno.
Pyaz bhunne ke baad, isme ginger-garlic paste daal do aur achi tarah se bhuno jab tak raw smell chali na jaaye.
Ab isme chopped tomatoes aur slit green chilies daal do. Tomatoes ko soft hone aur oil chhodne tak bhuno.
Step 4: Masale Add Karna
Ab isme turmeric powder (haldi), red chili powder (lal mirch powder), aur coriander powder (dhania powder) daal do. Masalon ko ache se mix karo aur 2-3 minutes tak bhuno.
Tadka mein thoda sa paani daal kar masalon ko cook karo jab tak oil separate hone lage.
Step 5: Dal ko Tadka Mein Add Karna
Cooked mung dal ko tadka mein daal do aur ache se mix karo.
Dal ko 5-7 minutes tak medium flame par pakne do. Agar dal zyada thick ho jaaye, toh thoda aur paani daal sakte hain.
Step 6: Garnish aur Serve Karna
Dal ko serving bowl mein nikaalo aur fresh coriander leaves se garnish karo.
Garma-garam Mung Dal tayaar hai. Isse roti, rice ya phir parathas ke saath serve karo.
