Uadad dal, jise hum sabhi dal makhani ke naam se bhi jaante hain, ek popular North Indian dish hai. Yeh dal creamy, buttery aur flavorful hoti hai. Aaj hum iski simple recipe share karenge jo ghar par asaani se banayi ja sakti hai.
Ingredients (Samagri)
Uadad dal (sabut) - 1 cup
Rajma - 1/4 cup
Paani - 4 cups (soaking ke liye) + 4 cups (cooking ke liye)
Pyaaz - 2 medium, finely chopped
Tamatar - 2 medium, finely chopped
Adrak - 1 inch piece, grated
Lahsun - 4-5 cloves, finely chopped
Hari mirch - 2, slit
Makhan (butter) - 2 tbsp
Malai ya fresh cream - 1/2 cup
Dahi - 1/4 cup
Hing - 1/4 tsp
Jeera - 1 tsp
Haldi - 1/2 tsp
Lal mirch powder - 1 tsp
Dhaniya powder - 1 tsp
Garam masala - 1/2 tsp
Salt (namak) - to taste
Hara dhaniya - for garnishing
Method (Vidhi)
Step 1: Dal aur Rajma ko Soak Karna
Sabse pehle, uadad dal aur rajma ko achhe se dho kar raat bhar (kam se kam 8 ghante) paani mein bhigo dein. Isse dal aur rajma achhe se phool jayenge aur jaldi se pak jayenge.
Step 2: Pressure Cooking
Raat bhar soak ki hui dal aur rajma ko saaf paani mein dal kar pressure cooker mein 4 cups paani ke saath daal dein.
Isme thoda sa namak aur hing dal kar 6-7 seeti aane tak paka lein. Seeti khatam hone ke baad, gas band kar dein aur pressure ko naturally release hone dein.
Step 3: Tadka Tayaar Karna
Ek bade kadhai mein makhan garam kar lein. Isme jeera daal kar usse crackle hone dein. Phir isme hing, pyaaz, hari mirch, adrak aur lahsun daal kar golden brown hone tak bhun lein.
Ab isme finely chopped tamatar daal kar achhe se paka lein jab tak tamatar soft na ho jaye aur oil alag na hone lage.
Step 4: Masala Banana
Ab isme haldi, lal mirch powder, dhaniya powder aur thoda sa namak daal kar achhe se mix kar lein. Masala ko ache se bhun lein taki raw smell chali jaye.
Step 5: Dal ko Masale Mein Milana
Pressure cooker ka dhakkan khol kar, cooked dal aur rajma ko masale wali kadhai mein daal dein. Isse achhe se mix kar lein.
Ab isme 4 cups paani aur daal kar medium flame par 20-25 minute tak paka lein. Beech-beech mein chalate rahen taki dal kadhai ke tal mein na chipke.
Step 6: Creaminess Aur Flavors Ko Add Karna
Jab dal gadhapan aur creamy texture mein aane lage, tab isme dahi aur malai daal kar achhe se mix kar lein. Isse 10 minute aur paka lein taki sab flavors achhe se merge ho jaye.
Step 7: Final Touch
Last mein garam masala daal kar achhe se mix kar lein. Gas ko band kar dein aur dal ko thodi der ke liye dhak kar rakhein taki flavors settle ho jaye.
Garnishing
Hara dhaniya finely chop karke dal ke upar garnish kar lein. Thoda sa makhan bhi upar se daal sakte hain extra richness ke liye.
Serving Suggestion
Uadad dal ko garma-garam roti, naan ya phir steamed rice ke saath serve karein. Iske saath thoda achar aur pyaaz ki lacha salad bhi serve kar sakte hain.
Tips (Kuch Zaroori Tips)
Uadad dal aur rajma ko achhe se soak karna zaroori hai taki dal soft ho jaye aur jaldi pak jaye.
Agar dal thodi thick lag rahi ho, to aap aur paani add kar sakte hain according to your preference.
Malai aur dahi se dal mein creamy texture aur rich flavor aata hai, lekin agar aap health conscious hain to aap inki quantity kam kar sakte hain ya skip bhi kar sakte hain.
Dal ko low to medium flame par hi pakaaye taki sab flavors achhe se merge ho sake aur dal creamy ban sake.
