Lucknowi Dal: Ek Nawabi Swad

Ingredients (Samagri):

1 cup arhar dal (toor dal)

1/2 cup chana dal

1/4 cup moong dal

1/4 cup urad dal

1 large onion (bareek kata hua)

2 tomatoes (bareek kate hue)

2-3 green chillies (bareek kati hui)

1 tablespoon ginger-garlic paste (adrak-lehsun ka paste)

1 teaspoon cumin seeds (jeera)

1/2 teaspoon turmeric powder (haldi)

1 teaspoon red chili powder (lal mirch powder)

1 teaspoon garam masala

2 tablespoons ghee

Salt to taste (namak swad anusaar)

Fresh coriander leaves for garnishing (hare dhaniye ke patte)

1 tablespoon fresh cream (optional)

Method (Vidhi):

Dal ko prepare karna:

Dal ko bhigo dena: Pehle, saari dal ko acchi tarah se paani se dho lein. Phir inhe 30 minute ke liye bhigo dein. Yeh kaddukas hone mein madad karega aur dal jaldi se pak jayegi.

Dal ko pressure cook karna: Ab ek pressure cooker mein dal daal kar usme lagbhag 3-4 cups paani dal dein. Haldi aur thoda namak daal kar cooker ka dhakkan band kar dein. 3-4 seetiyaan lagne tak dal ko paka lein. Jab seetiyaan lag jayein, gas band karke cooker ka pressure nikalne dein.

Tadka taiyaar karna:

Ghee garam karna: Ek bade pan ya kadhai mein ghee garam karein. Jab ghee garam ho jaye, usme jeera daal dein. Jeera jab chhankne lage, tab usme adrakh-lehsun ka paste daal kar bhun lein.

Pyaaz bhunna: Ab isme bareek kata hua pyaaz daal kar bhun lein. Pyaaz ko tab tak bhunna hai jab tak wo golden brown na ho jaye. Isse dal ka swad aur badh jaata hai.

Tomato aur masale milana: Jab pyaaz acchi tarah se bhun jaye, to isme bareek kate hue tamatar, hare mirch, lal mirch powder aur thoda sa namak daal kar bhun lein. Tamatar ko achche se mash kar lein taaki ek smooth gravy ban jaye.

Dal ko tadka milana:

Dal ko tadka mein milana: Ab pressure cooker mein se paki hui dal ko is tadka mein daal dein. Dal ko acchi tarah se mix karein aur agar dal bahut gaadhi lag rahi ho to thoda paani aur daal kar desired consistency tak le aayein.

Garam masala aur fresh cream milana: Dal ko mix karne ke baad isme garam masala daal kar acchi tarah se mila lein. Agar aap chahte hain to is stage par ek tablespoon fresh cream bhi mila sakte hain taaki dal ka texture aur creamy ho jaye.

Dal ko simmer karna: Dal ko ache se mix karne ke baad, use 10-15 minute tak dhimi aanch par sim karne dein. Yeh step dal ko ekdum nawabi swad dega.

Garnish aur Serve karna:

Garnish: Jab dal ache se pak jaye, to use hare dhaniye ke patton se garnish karein. Garnish karne se dal aur bhi sundar aur swadisth lagti hai.

Serve: Garma garam Lucknowi Dal ko tandoori roti, naan, ya jeera rice ke saath serve karein. Is dal ka swad itna lajawab hota hai ki yeh aapke khaane ka star dish ban jayegi.

Tips aur Tricks:

Dal ko raat bhar bhigoein: Agar aapke paas time ho, to dal ko raat bhar ke liye bhigo dein. Isse dal aur bhi soft aur tasty banegi.

Ghee ka upyog: Lucknowi Dal ka asli swad tab aata hai jab usme ghee ka upyog kiya jaye. Aap tel bhi use kar sakte hain, par ghee is dish ko ekdum asli nawabi touch deta hai.
